A: “Gazan” is representing Fuji mountain. Maybe imaging sun rising from the Fuji.

| Q: Yonezawa Beef is so famous that people say Matusaka Beef in west, Yonezawa Beef in east. What is so famous about this beef? |
A: Yonezawa beef is famous with its sweet fat. Most of other beef from abroad, they tends to have more smell than a sweetness.

| Q: The other day I visited here to have “Today’s service lunch set” but was ran out around 13:00. Do you have limited number? |
 A: Yes, it’s limited 20 sets.
They finish around 12:00 to 12:30. Especially repeater knows about it so when we change the menu, they ran out much faster, like before 12:30 so I’m afraid it is not guaranteed.

| Q: How often do you change “Today’s service lunch set” menu? Is there any regularity for the contents? |
A: We change every week. There is no regularity for menu.

| Q: When is the peak hour for lunch? |
A: About 12:00 to 13:00 and around 12:15 we will be really full. We recommend before 12:00 or after 13:00. We only open for dinner time on Satuday and holiday. Lunch menu is only for weekdays.

| Q: What kind of customer coming for lunch? Is it quite a lot of foreign people because of the location near American Club and Russian Embassy? |
A: Mostly office people. Foreigner prefers dinner time than lunch time.

| Q: Which is most popular lunch set menu? |
A: “Today’s lunch” and maybe because of this season, they like a set of beef rice in a bowl and cold noodle. (This interview was made in September, still hot season)

Q: Is this real Yonezawa beef used in this Bset (Beef bowl and cold noodle – 1,000 yen)?
This noodle is also very popular with its chewy noodle. |
A: Of course they are. Actually this lunch set is just an eye-catcher only for weekdays. To say the truth, it is money loser.
We changed to Sapporo cold noodle from 1 month ago. Sapporo noodle is famous with its softness and smoothness. We are using soy sauce for soup base. From October we are planning to have set beef bowl + ramen noodle. This is limited menu only until March. We take a broth from Yonezawa beef. It should be best season to have from now on.

| Q: I heard we can get a drink after meal for free after 13:00. |
 A: We have so many repeaters for our lunch time and we wanted them to get relaxed. We haven’t decided the term but we may finish this service when we ran out coupons we are distributing now.

| Q: What is your main concern about this shop? |
A: We want the customer to have relaxed time in our shop. So we won’t ask to share the table.

| Q: As your advertising copy, interior is spacious and absolutely gorgeous. |
| A:Those interiors are from mainly Korea and China. We didn’t restrict the source like some are from directly Korea and some from interior shop in Japan. |
